What's cookin'

As I stated in this post, I've been doing a lot of cooking lately. I thought I'd start sharing some of my successful meals because I know a lot of my blog readers either love to eat good food or love to cook it (or both like me). Here's my first What's Cookin' meal.


Broiled salmon and quinoa salad



Both recipes can be found in this book -


What's good about the meal:

-Salmon is high in protein, omega-3 fatty acids, and vitamin D
-Broiled salmon is fast, only needing about 6-9 minutes to cook
-Quinoa is a complete protein source (contains a balanced set of essential amino acids), fiber, magnesium, and iron
-Both are flavored with spices, herbs, and peppers making it low in sodium

What's not-so-good:

-Quinoa needs to be rinsed and dried for about 15 mintues before cooking
-The salad contains raw onions so grab a piece of gum after you eat it
-Salmon is fatty (even though it's good fat, so portion yourself)

  1. I forgot about the benefits of quinoa....I'll have to make that a regular lunch salad for Miki.
